Sweet potato lentil curry casserole

Ingredients

2 Cup Brown Rice
1 Cup Red Lentils
2 T Curry Powder
3+ cloves Garlic
1 teas each or Coriander, cumin, and turmeric
2 T Olive oil
1 can coconut cream
1 box chicken broth
4 Sweet potatoes, peeled and cut lengthwise (~¼ inch thick slices)
8-16 oz Sharp cheddar cheese grated (to cover top)

Derections

Mix dry ingredients in baking dish. Pour in 6 cups of liquid (coconut milk, broth and/or water). Lay sweet pototos on top. Cover with foil and bake 350 for 1 ¼ – 1 ½ hours until rice is tender. Uncover, spread cheese and cook 15 minute or broil briefly so starts to golden.
