Peanut Sauce

Ingredients:

½ Cup Peanut Butter
1 Cup Coconut milk or cream
1 Cup Chicken or vegetable broth
2 T Red Curry paste
2 T Brown sugar
4 T Lemon juice (1 lemon)
2-4 T Soy Sauce (to taste)
1 teas Salt (optional)

Derections:

Whisk all ingredients in a little saucepan until mixed. Cook on Med heat until starts to thicken (20-30 min).
